Mince hash
Option 1: “Lean & Classic” Hash
Ingredients:
- 2 medium potatoes, diced small
- 1 onion, finely chopped
- 1 red pepper (or any colour), diced
- 1–2 garlic cloves, minced
- ~150g lean corned beef (or minced beef)
- Olive oil or avocado oil spray
- Paprika, black pepper, maybe a dash of Worcestershire sauce
- Optional: fried egg or poached egg on top
Method:
- Parboil the diced potatoes for about 5 minutes; drain and let them steam dry — this helps them crisp better.
- Heat a little oil in a large pan and cook the onion and pepper until soft.
- Add the potatoes and let them brown nicely (resist the urge to stir too often).
- Stir in garlic, diced corned beef, and your spices. Cook until everything gets those golden edges and the beef crisps a bit.
- Top with an egg if you want a protein boost.
