Mince hash

Option 1: “Lean & Classic” Hash

Ingredients:

  • 2 medium potatoes, diced small
  • 1 onion, finely chopped
  • 1 red pepper (or any colour), diced
  • 1–2 garlic cloves, minced
  • ~150g lean corned beef (or minced beef)
  • Olive oil or avocado oil spray
  • Paprika, black pepper, maybe a dash of Worcestershire sauce
  • Optional: fried egg or poached egg on top

Method:

  1. Parboil the diced potatoes for about 5 minutes; drain and let them steam dry — this helps them crisp better.
  2. Heat a little oil in a large pan and cook the onion and pepper until soft.
  3. Add the potatoes and let them brown nicely (resist the urge to stir too often).
  4. Stir in garlic, diced corned beef, and your spices. Cook until everything gets those golden edges and the beef crisps a bit.
  5. Top with an egg if you want a protein boost.
