5. Simple Potato & Chickpea Curry
In a pan, toast cumin and mustard seeds in oil, then add onion, garlic, and ginger. Stir in chopped potatoes, chickpeas, and a teaspoon of curry powder or garam masala. Add tinned tomatoes and simmer until thick. Serve with rice or flatbread. Deeply satisfying without being heavy.
