Slice potatoes into cubes, cook them slowly in a non-stick pan with olive oil until soft. Pour over whisked eggs, salt, pepper, and maybe a handful of spinach or peppers. Cook gently until set, then grill the top. Serve warm or cold

It's like an omelette but with potato lumps in it too.
